basic vinaigrette

Make this and keep it in your refrigerator always. Why would you want to put all the chemicals and preservatives of a bottled dressing in your body? This is EASY and CHEAP and so much better for you. It is tasty and tangy, yet lets the flavors of the vegetables shine through.
Basic Vinaigrette
1/3 cup extra virgin olive oil
2 tablespoons red wine or balsamic vinegar
1 generous teaspoon Dijon mustard
salt and pepper to taste.
Pour into a jar, shake and use or store in the refrigerator for several weeks. Experiment with different oils and vinegars to mix things up when your everyday salad starts to get boring.
